Michelin stars: what makes a restaurant great?

The star restaurants of the peninsula were announced at the Spanish and Portugese Michelin guide 2017 presentation in Mas Marroch, the seat of Can Roca on November 23rd. We want to congratulate all the prize-winners and transmit our admiration to those who did not obtain a star but applied for it, as well as to those who achieved recognitions such as Bib Gourmand, as these achievments denote the highest levels of quality.

“what separates a good restaurant from an excellent restaurant?” The newspaper Georgia Straight (Vancouver) asked dozens of chefs and local restauranteers of several types. As we want to examine what quality means, we’ll share some of the most relevant conclusions from this study with you:

  • Consistency and attention in the details

We assume that a good restaurant serves good food. But an exceptional restaurant must offer something else. According to most of the interviewies, what really separates a good restaurant from an excellent one is the consistency and attention that they put into details. Everything counts in order to create a perfect experience: napkins, tableware, lighting, tidiness, cleanliness, room temperature, level of noise, music, chairs, layout… When consistency becomes an attitude, the level of service is maintained over the years and the client invariably receives the same attention.

  • Good ingredients, good dishes

Most of the interviewed restauranteers agree that seasonal ingredients and products of extra quality help to raise the level of a restaurant. Your basic practice must be to have a network of trustworthy providers whose quality is constant.

  • Perfect service

The human factor is crucial for ones experience in a restaurant. The line between the deficit or excess of attention is thin, and finding the right balance in the rhythm of service is an art that good restaurants dominate. When the kitchen and service teams understand each other, their positive energy is perceived in the ambience.

  • Aligned with client expectation

What makes a restaurant good, is that it fulfills it’s mission and gives what it’s expected to give. A fast food place that serves a tasty warm meal quickly, is a good restaurant. Service, decoration and food must be aligned to the concept of the business so that it meets the client’s expectations.
